Silvae Venatio

The Woodland Feast · Aronia, Porcini & Herb Roast Rub

An imagined chapter from the Alchemist’s Pantry.

A lantern at the woodland edge, a table laid for company and a roast scented with herbs: this is the scene behind Silvae Venatio. Porcini and garlic form a deep savoury base, rounded by muscovado and the dark, tart edge of aronia berries. Sage and rosemary speak of the roast kitchen, with a small aromatic flourish of hyssop completing the forest-inspired tale.

The Alchemist’s Recommendation

Designed for lamb joints, duck and other rich roasts. Pat the surface dry and rub on a light even coating before cooking. Choose safe cooking guidance for the cut, cook duck thoroughly and protect the sugar-rich crust from fierce direct heat. Pair with red cabbage, roast roots or a simple pan gravy. Not intended as an uncooked finishing seasoning.

Coarse sea salt, light muscovado sugar, garlic granules, porcini mushroom powder, onion granules, aronia berry powder, coarse black pepper, sage leaf, tapioca starch, rosemary leaf powder, hyssop leaf.
