Ignis Saxonicus

Saxon Fire · Cherry, Chilli & Woodland Beef Rub

An imagined chapter from the Alchemist’s Pantry.

Imagine the great hearth at dusk, its copper pans catching the glow as a roast is carried from the fire. Saxon Fire takes that scene as its inspiration: tart cherry and dark muscovado meet the savoury weight of tomato and porcini. Aji amarillo brings a warm golden chilli note, while lovage, onion and garlic give the blend its kitchen-garden heart. A modern pantry tale, crafted for a rich roast rather than a claim to an ancient recipe.

The Alchemist’s Recommendation

Designed as a cooking rub for beef joints and other robust roast cuts. Pat the surface dry, apply an even light coating and cook using guidance appropriate to the cut. Shield from fierce direct heat so the sugars do not scorch. Pair with roast roots, braised red cabbage or a simple onion gravy. This is a cooking seasoning, not an uncooked finishing sprinkle.

Ingredients

Coarse sea salt, dried tomato flakes, unsweetened freeze-dried cherry powder, dark muscovado sugar, porcini mushroom powder, onion granules, coarse black pepper, aji amarillo chilli powder, lovage leaf, garlic granules, tapioca starch.
